Economic Development Update: A Culinary Boom in Oshkosh this May

Economic development often moves in waves, and in Oshkosh, the restaurant sector is riding a big one. As communities grow and shift, certain industries step up to meet new demands, and right now, it’s clear that food is fueling Oshkosh’s latest development trend.

Since the start of 2025, Oshkosh has seen a remarkable uptick in restaurant-related activity. More than 15 restaurants have either opened their doors, broken ground, or are progressing through early planning and permitting. This surge is not only revitalizing the local food scene, it’s helping balance the losses sustained during the pandemic years of 2020 through 2022.

New Restaurants Bringing Fresh Flavors

Leading the charge was Anchor & Port, which opened at the Marriott Waterfront Hotel just in time for the 2024 holiday season. The space underwent a major transformation, converting the former restaurant and indoor pool area into a sleek, modern dining destination in the heart of downtown.

Since then, the Oshkosh Chamber has celebrated ribbon cuttings at:

• Freddy’s Frozen Custard & Steakburgers on Washburn,
  
  

• The Original Steaks & Hoagies on Koeller,
  
  

• and a second Oshkosh location for Jersey Mike’s Subs on North Jackson.
  
  

Several long-awaited restaurant projects are also nearing completion. Golden Nest Pancakes & Café on Oshkosh Avenue is slated to open later this May, while Truffle Pig, an upscale Italian ristorante, is preparing for a summer debut downtown on State Street. On Murdock, a brand-new standalone Domino’s Pizza is in the works, which will eventually replace the franchise’s current leased space on Jackson Street.

Investing in Local Legends and New Favorites

Longtime favorite The Roxy, a beloved supper club in Oshkosh, is undergoing a major renovation—over $1 million in improvements to its kitchen, dining area, and overall interior. This investment ensures The Roxy remains a key fixture in the community while enhancing the customer experience without losing its iconic charm.

Locals will also be excited to know that Zhou’s Fresh Egg Rolls, a popular staple at the Oshkosh Farmers Market, is opening a brick-and-mortar location on North Jackson. No more waiting for Saturdays to enjoy your egg roll fix!

Next door to the newest Jersey Mike’s, Wing Stop is wrapping up its construction and is expected to open this summer. And on the mobile dining front, Indian Peaks, a new Indian food truck from Sunny Singh of Parnell’s Place, will be hitting the streets soon, popping up at downtown events and festivals throughout the summer.
